Using your Nella sushi case is a breeze. First, plug it into a 110V, 60Hz, 1 - phase outlet with the NEMA 5 - 15 plug. Use the digital temperature controller to set the temperature between 0°C - 12°C (32°F - 53.6°F) according to your needs. Place your sushi or other food items in the included 1/3 GN pans and put them inside the case. The sliding doors make it easy to access the food. As for maintenance, keep the interior clean by wiping it regularly with a damp cloth. The automatic defrost function takes care of ice build - up, but you should still check the condensation collection basin from time to time and empty it if it's full.
